Kale: Because Screaming Into The Void Isn't Breakfast

Hello, Locavores! I hope y’all didn’t melt over the weekend. This no A/C in my car or my apartment situation is for the birds. Then again, the birds are probably hot as Hades too. I take it back. Sorry, birds.

Today I’m here to talk you off a very leafy cliff. Or maybe onto the leafy cliff. I’m not sure where I was going with that.

Alright, Locavores, grab your snack and your readers (I see you squinting) and let’s get into it.

You know how some mornings a cup or two of coffee is perfectly sufficient, and other mornings you could fall into a vat of radioactive coffee and your only superpower would be managing to speak in full sentences during a meeting?

Yeah. Me too.

Apparently coffee isn’t a sufficient breakfast (who knew?) and you need balance. Fiber. Protein. Some vitamin C. You know... actual food that fuels your day and doesn’t make you panic by 10 a.m.

Enter: Kale

I know, I know. Kale is the overachiever of the produce world. The Hermione Granger of your fridge. But listen—this leafy green is legit.

We’re talking:

  • Vitamin C
  • Vitamin K
  • Fiber
  • Calcium
  • Iron
  • Antioxidants

And unlike your third espresso shot, kale won’t spike your cortisol and send you into an anxiety spiral.

Okay but like... how do I even kale?

Glad you asked. Here are a few easy ways:

Massage it: Rub olive oil, lemon juice, and salt into kale. It softens and tastes better.

Sauté it: Garlic, olive oil, red pepper flakes. Add eggs or toast.

Smoothie it: Add to banana and pineapple smoothie.

Toss it anywhere: Soup, pasta, tacos, lasagna.

“WHYYYYYYYYY I JUST WANT MY COFFEEEEEEE!!”

Me too. So here are two easy recipes:

Savory Kale Quinoa Breakfast Bowl

Ingredients:

  • 1 cup cooked quinoa
  • 1 handful kale, chopped
  • ½ avocado, sliced
  • 1–2 tbsp hummus or egg (optional)
  • Cherry tomatoes
  • Salt & pepper

Lemon-Tahini Drizzle:

  • 1 tbsp tahini
  • Juice of ½ lemon
  • 1 tsp maple syrup or honey
  • Splash of water
  • Pinch of salt

Instructions:

  • Massage kale with oil or lemon.
  • Add quinoa, kale, avocado, tomatoes.
  • Mix drizzle ingredients.
  • Pour and serve.

Chopped Kale & Cucumber Yogurt Bowl

Ingredients:

  • 1 bunch kale, chopped
  • 1 cucumber, diced
  • ½ cup Greek yogurt
  • 1 tbsp olive oil
  • Juice of ½ lemon
  • 1 garlic clove
  • Salt pepper

Instructions:

  • Mix yogurt, oil, lemon, garlic.
  • Add kale and cucumber.
  • Add herbs if desired.
  • Let sit 10–15 minutes.

And!? We’ve got the good kale.
